(Wines and Knives )Vinhos e facas

Acontece algumas vezes de querermos presentear alguém com um vinho mas não entendemos nada do assunto. Chegamos a uma adega ou loja especializada e começamos a olhar aquele mundo de opções. Mas não chegamos a nenhuma conclusão, a não ser que o vinho mais caro seria o melhor. Isso aconteceu comigo num dos aniversários de Si Fu da década de 2010, onde eu horas antes parei numa adega enorme próxima da  minha casa, com vinhos do mundo todo. Sem muito dinheiro e sem saber o que estava fazendo, comprei um entre 50 e 100 reais. Nunca soube se Si Fu sequer provou.
Porém, ele mesmo me disse tempos depois : " Um dos segredos para se tomar vinho, é demorar a mudar de faixa de preço." - Eu fiquei com cara de quem não entendeu e ele prosseguiu: "...Se você bebe um vinho de 50 reais, quando você muda para um de 100, você não consegue mais gostar daquele de 50. Seu paladar muda." - Forcei minhas sobrancelhas olhando pra ele como quem quer perguntar algo mas está sem graça. Si Fu pareceu ler meus pensamentos e completou: "Pereira, vinho de menos de 50 reais, quem entende diz que não é vinho." - Si Fu sorriu e eu também.
Em outra ocasião em 2011, provei "vinho de abacaxi" (ou o chamado "Cooler") . Fui contar animado para Si Fu que meus dias de Coca-Cola tinham acabado. Ele pareceu quase ofendido, mas ao mesmo tempo sorrindo perguntou: "Ah é Pereira? E como estava?" - "Bem docinho!" - respondi. - Si Fu começou a rir e me convidou para tomar vinho com ele na mesma hora. Parecia que ele não podia se segurar em vista de uma asneira que seu discípulo falava.
Fomos a um restaurante e antes de sentarmos ele disse: "Pereira, não existe vinho 'docinho'. Se o vinho está 'docinho' , é porque não é vinho". - Eu abri um sorriso entendendo finalmente.
Sobre isso , Si Fu comentou a pouco tempo sobre um erro comum: Não se dá o vinho mais caro de presente ou se oferece numa recepção simplesmente por ser mais caro. O vinho deve ser escolhido de acordo com o que pensamos em comer com ele. Pois é exatamente a comida que ingerimos junto do vinho que vai reequilibrar seu sabor.

It happens sometimes we want to present someone with a wine but do not understand anything about it. We came to a winery or specialty store and started looking that world of options. But we have not reached any conclusion, unless the most expensive wine would be best. This happened to me on one of the birthday celebrations of Si Fu in the 2010s, where I stopped hours before at a  big wine store next to my house , with wines from around the world. Without much money and without knowing what I was doing, I bought a US$ 15 to US$ 30 wine. I never knew if Si Fu even proved.
But he told me some time later: "One of the secrets to drink wine, is slow to change price range." - I was look like I did not understand and he continued: "... If you drink a glass of wine that costs US$ 15 when you switch to a US$ 30 wine, you can not more like that of US$ 15. Your taste changes." - I forced my eyebrows staring at him as if to ask something but is bland. Si Fu seemed to read my thoughts and added, "Pereira, less than US$ 15 wine, for those who understands says it's not wine." - Si Fu smiled and me too. (* Those prices is taken from Brazil´s money with have a lot of taxes)
On another occasion in 2011, I tasted "pineapple wine" (or so-called "Cooler"). I was excited to tell my Si Fu that my days of Coca-Cola were over. He seemed almost offended, but at the same time smiling asked, "Oh yeah Pereira? And how was it?" - "Well, very  sweetie!" - I replied. - Si Fu laughed and invited me to drink wine with him at the same time. It seemed that he could not hold in view how screwed up his disciple spoke.
We went to a restaurant and before sit down he said, "Pereira, there is no 'sweetie' wine . If the wine is 'sweetie', is because it is not wine.". - I opened a smile finally understanding.
On this, Si Fu commented recently on a common mistake: Do not give the most expensive wine as a gift or when offering a reception simply because its the more expensive. The wine should be chosen according to what we think of eating with it. This is exactly the food you eat with the wine that will rebalance its flavor.
Caminhando com Si Fu em outra ocasião, disse que havia comprado um vinho da Califórnia (foto). Ele fez algumas observações sobre minha escolha, e apenas ressaltou um ponto positivo : "Quando estamos conhecendo vinhos Pereira, o ideal é que comecemos pelos vinhos do Novo Mundo.Acho que você fez uma boa escolha." - Tirei as mãos do bolso e comecei a movê-las para acompanhar os rápidos passos que eu dava para caminhar ao lado do Si Fu em direção ao Shopping Barra Garden. E sem mostrar que havia entendido o que ele disse, Si Fu gentilmente prosseguiu: " ... Sabe por que? Porque existem muitas opções e variações nos vinhos do Velho Mundo. Com os do Novo Mundo é mais fácil acertar"
Voltando ao restaurante , Si Fu após escolher o vinho, colocou apenas um pouco em minha taça e sacudiu levemente a dele, deixando o vinho escorrer pela lateral. Aqueles delicados e misteriosos filetes que escorriam bem devagar, denotam o teor alcoólico do vinho segundo Si Fu:  "Esses filetes que estão escorrendo Pereira, chamamos de lágrimas do vinho." - Disse Si Fu enquanto segurava a taça próxima a mim apontando com o dedo indicador da outra mão para onde eu deveria olhar.

Walking with Si Fu on another occasion, he said he had bought a wine from California (photo). He made some remarks about my choice, and only said one positive point: "When we know just a little about wines Pereira , the ideal is to start by wines from the New World (Americas). I think  you made a good choice." - I took my hands from my pockets and began to move them to follow the quick steps I took to walk to be by Si Fu´s side  in the direction of the Barra Garden Mall. And without showing that I understood what he said, gently Si Fu continued, ". ... Do you know why? Because there are many options and variations in wines from the Old World (Europe)  while the New World wines is easier to hit"
Going back to the restaurant, Si Fu after choosing the wine, put only a little in my glass and gently shook his glass, leaving the wine runs down the side. Those delicate and mysterious threads that ran slowly, denote the alcohol content of wine second Si Fu: "These threads that are running Pereira, we call 'wine tears'." - Si Fu said as he held the cup next to me pointing with the index finger of the other hand to where I should look.
Numa tarde de Domingo , estudava Biologia para a aula que daria no dia seguinte  e resolvi abrir uma garrafa de um vinho que ganhei de presente(foto). Comecei a beber lembrando do que Si Fu havia comentado: "Quando beber vinho Pereira, olhe um pouco para ele, depois enquanto leva a boca, sinta o cheiro do vinho suavemente. Não engula de uma vez, deixe ele na boca por um tempo e sinta o sabor do vinho. Dessa forma, você usa todos os seus sentidos para apreciá-lo..."
Por um tempo , estava indo bem, mas logo depois começou a ficar enjoativo, mas meu pensamento foi: "Se abri a garrafa, agora vou ter que terminá-la para não estragar".
Acontece que pouco tempo depois, ouvi de Si Fu numa mesa com dois outros discípulos: Glauco e Thales, que ele havia provado uma IPA e sentindo vontade de um pouco mais, resolveu abrir outra garrafa. Porém, desta segunda ele bebeu apenas um gole e jogou a garrafa de IPA quase cheia fora : "Não dá pra guardar depois de aberta" - Disse ele.
Finalmente, em seu carro, toquei nestes dois assuntos com ele, e disse que me espantou saber que havia jogado a cerveja fora. Si Fu comentou: "Pereira, existe uma diferença entre beber e apreciar. Geralmente pessoas que apreciam a cerveja , a bebem para sentir as diferentes notas de seu sabor. E muitas vezes um copo é o suficiente. Isso é bem diferente de quem toma cerveja como bebida." - Si Fu fez uma pausa e prosseguiu: "Por isso, você observa se alguém sabe beber ou entende do que está bebendo em termos de cerveja, pela quantidade de latas ou garrafas que ficam na mesa da pessoa ao final. Você vai perceber que à mesa dos apreciadores, se tiver mais de duas garrafas já e muito."

A Sunday afternoon, studying biology for class that I would lecture the next day . I decided to open a bottle of wine that I gained  (photo). I started drinking remembering what Si Fu had commented: "When drinking wine Pereira, look a little at it, then while taking it to your mouth, smell the wine gently. Do not swallow at once, leave it in the mouth for a while. feel the taste of wine. this way, you use all your senses to enjoy it ... "
For a time, I was going well, but then started to get very bad taste, but my thought was, "If I open the bottle, now I have to finish it not to spoil."
It turns out that shortly after I heard from Si Fu at a table with two other disciples, Glauco and Thales, he had proved an IPA bottle and feeling like a little more, decided to open another bottle. But from this second one he drank only a sip and threw the bottle of IPA almost full out: "You can not keep after opening" - he said.
Finally, in his car, I touched on these two matters with him, and said that amazed me know that he had thrown the beer out. Si Fu said: "Pereira, there is a difference between drinking and enjoy. Usually people who enjoy beer, drink to feel the different notes of its flavor and often a cup is enough This is quite different from those who just drink beer... " . - Si Fu paused and continued, "So, you see if anyone knows drinking or understand what you're drinking in terms of beer, the amount of cans or bottles that are on the table of the person at the end you will realize that on the table of the ones who drink to enjoy it, if you have more than two bottles  is already a lot. "
Com toda essa vivência, foi impressionante como minha aflição com o "Baat Jaam Do" se dissipou. Eu pude perceber que sempre olhei para o Baat Jaam Do como se fosse um maravilhoso copo de Coca-Cola gelada num dia bem quente que você bebe e rapidamente se satisfaz. Por isso, meus movimentos brutos e sem delicadeza , transformavam as duas facas em dois cassetetes em minhas mãos, sempre irreconhecíveis para mim. Quando passei a olhar para o Baat Jaam Do como uma taça de vinho que não conheço, passei não somente a segurá-los, mas perceber onde estava tocando e como deveria ser o toque em cada movimento de cada parte. Os movimentos mais brutos ficaram mais evidentes como o sabor mais amargo de quem engole o vinho sem o devido preparo.
Entendi melhor , que não é a faca inteira que corta, e o posicionamento dela de acordo com o movimento que se está executando diz se ela está cortando ou "batendo", assim como o mesmo vinho num copo descartável e numa taça apropriada tem um gosto completamente diferente.
Por fim, dentre tantas coisas, percebi que o Baat Jaam Do precisa de investimento. Quero dizer, que se você comprou uma garrafa de IPA no sacrifício e vai beber tudo para não jogar dinheiro fora, melhor você comprar uma Lager nacional. Pois você desde o primeiro gole, não vai apreciar o que está bebendo. Da mesma forma, não preciso mais praticar o Do de "cabo a rabo" todas as vezes. Investindo uma determinada quantidade de tempo, tenho procurado apreciar cada movimento por vez, como vi sempre meu Si Hing Leonardo fazer com tanto esmero. E assim como a IPA do Si Fu, se eu sentir que já deu, eu guardo as facas e vou fazer outra coisa...

With all this experience, it was amazing how my affliction with "Baat Jaam Do" dissipated. I could see that always looked to the Baat Jaam Do like a wonderful glass of cold Coca-Cola in a very hot day you drink and quickly satisfied. Therefore, my brute movements without delicacy, turned two knives in two batons in my hands, always unrecognizable to me. When I went to look at the Baat Jaam Do as a glass of wine that I do not know well,I not only started to hold them, but realize where I was touching it and how it should be touch in each movement of each part. The more brute movements became more evident as the most bitter of who swallows the wine without proper preparation.
I understood better, that is not the whole knife that cut, and positioning it according to the movement that is running says if it will cut or "knocks", as the same wine in a disposable cup and a proper cup has a taste completely different.
Finally, among many things, I realized that the Baat Jaam Do needs investment. I mean,if you bought a bottle of IPA trough sacrifice and will drink everything just to not throw money away, better buy a national Lager. For you from the first sip, you will not enjoy what you're drinking. Similarly, I do not need to practice from "cover to cover" every time. Investing a certain amount of time, I wanted to enjoy every move at a time, as always saw my Si Hing Leonardo do so carefully. And just as the IPA bottle from Si Fu, if I feel that already is enough, I keep the knives and go do something else ...
Si Fu(foto) , prometeu que eu iria mudar... Hoje percebo que estou mudando. Mas com muita resistência. As vezes é legal também pegar as facas, fazer a sequência até seus ante-braços estarem doendo, e fazer mais uma vez, só que agora sem usar força pois você já não a tem. Assim como de vez em quando uma Coca-Cola bem gelada, num copo duplo de vidro com aquele suor do gelo escorrendo pela parte externa do copo e o barulho do gelo estalando dentro dele enquanto derrete também é o máximo! rs

Si Fu (photo), promised me that I would change ... I now realize that I'm changing. But with much resistance. Sometimes it's nice also to hold the knives, do the entire form untill my forearms were aching, and do again, only now without using force because I no longer have. As well as occasionally a cold Coca-Cola in a double glass with that ice sweat running down the outside of the cup and ice popping noise inside it as it melts is also the maximum! LOL
